“Coconut & Red Dragon Fruit Jelly Hearts”

This is a simple but impressive dessert to make. For sure your family and friends will be so impressed when you hand one of these jelly hearts. Dragon fruit is delicious and nutritious too, so all the more reasons to enjoy it! The color of the red dragon fruit looks amazing. It goes well with the creaminess of the coconut. Even though it takes a bit of time to do it this way, it looks beautiful once the jelly is set. If you do not have the time you can enjoy the jelly as it is, set in a jelly mold or even a glass. You can use any gelatin you prefer and follow the requirements as per your gelatin.

Ingredients

For the red dragon fruit jelly

220 g frozen red dragon fruit pieces (thawed)

1 tablespoon sugar

100 ml coconut milk from a can

1 teaspoon vegetarian gelling powder

For the coconut jelly

100 ml coconut milk from a can

1 teaspoon vegetarian gelling powder

200 ml unsweetened coconut milk

2 tablespoon palm sugar grated

1/4 teaspoon salt

Method

First, take 3 glasses and prop them up on a muffin tray. To keep them from slipping, place a piece of paper and prop them on an angle.

For the red dragon fruit jelly

In a small food processor blend the thawed red dragon fruit and the 1 tablespoon sugar until smooth.

In a small pot add the coconut milk and the gelling powder, mix, then add the blended dragon fruit mixture.

Heat the mixture on a medium heat, whilst stirring until it comes to a boil. Take off heat, carefully pour onto the tilted glasses, filling each glass halfway, whilst on the tray (as shown in the picture)

Place the tray with the glasses in the fridge without changing its tilted position,  for an hour or so or until firm and set.

For the coconut jelly

Once the jelly is set, take the tray with the glasses from the fridge and tilt the glasses in the opposite direction.

In a pot add the canned coconut milk and the gelling powder, give it a mix, then add the rest of the coconut milk and sugar.

On medium heat, whilst stirring bring to a boil. When it comes to a boil, take off heat and carefully pour onto the other side of the glasses. There might be a bit of leftover depending on the size of the glass you are using.

Carefully place the tray with the glasses in the fridge until firm. Once firm, take out and enjoy as it is or top it up with fruits and serve.
