“Surprise, it’s Watermelon!”

We’re intimately familiar with watermelon juice, the infamous karaa fani, that our moms prepare every Ramadan. Some of us love eating watermelon slices as a healthy snack but that’s about it. Despite there being an abundant supply of watermelons in the country, the ways in which we utilize this versatile fruit is extremely limited.

Thus, we looked around for some unique recipes that include watermelon in an unexpected manner.

Watermelon Baked Chicken

This recipe calls for chopped and pureed water melon (make sure all the seeds are gone) and apple cider vinegar (season to your taste with chili flakes or Sriracha). Cook for 20 to 30 minutes to reduce into a thick sauce. Lather the sauce onto a chicken and bake for about an hour. Viola, your dish is done.

Watermelon Yogurt Pops

This is perfect for a hot, humid day. Just pop some watermelon, yogurt, a spoonful of sugar and a squeeze of lemon into a blender. Mush it all together and pour into some popsicle molds. Freeze and enjoy.

Watermelon and Feta Salad

Watermelon provides a whole new depth to your salads, especially if paired with feta cheese. Just toss in your favorite greens, chopped watermelon, toss with olive oil and season well. Crumble some feta cheese to top it off. You have the a delicious healthy salad.
