“Taste Hacks – Sun-dried Tomatoes”

You have found the perfect recipe for pasta. It looks yummy and is very healthy. Unfortunately, one of the main ingredients is – gasp – sun-dried tomatoes. You spend half the day riding around Malé looking for this elusive unicorn. But to your eternal sorrow, it is nowhere to be found.

But all hope is not lost, we here at Taste have found a way you can make sun-dried tomatoes at home. All you need are a few ingredients, your trusty oven and a lot of patience.

What you’ll need:

2 kg Tomatoes

2-3 cloves of garlic

Herbs of your choice (basil, oregano, rosemary recommended)

Olive Oil

Salt

Chili flakes (Optional)

2 Mason Jars (Depending on the size)

What you’ll do:

Preheat the oven to 100°C.

Cut the tomatoes in half, lengthwise and gently squeeze out all the seeds.

Place on a baking tray, skin side down and generously sprinkle with salt.

Place in oven and bake for three hours. Open the oven door periodically and let the moisture escape. Turn the tomatoes and sprinkle with a bit more salt and bake for three more hours. Keep repeating this procedure until the tomatoes are completely dry. This might take up to twelve hours.

Once your tomatoes are done, let them cool down completely.

Roughly slice your garlic cloves.

Layer the mason jar with a few tomato slices. Place a few garlic slices, herbs and chili flakes (if using) on top of the tomatoes. Keep layering in this manner till the jar is nearly full. Pour in the olive oil and fill the jar completely.

Your sun-dried tomatoes are done. Place them in the refrigerator and let steep overnight before use.
